Almond Biscotti

Ingredients:
  • 100g plain flour
  • 100g caster sugar
  • 1½ tsp baking powder
  • rind of half a lemon
  • 120g blanched whole almonds
  • 1 large egg, beaten

Preheat your oven to 180°C.

Place the flour, sugar & baking powder in a bowl and slowly mix in the beaten egg till the dough holds… you may not need all the egg. Add the lemon rind & whole almonds and shape into three long sausages with floured hands.

Place on a baking tin with parchment paper and bake for 20-30 minutes until lightly brown. Remove and leave to cool for 10 minutes to let it set.

Next, slice the three biscotti into thin slices on the diagonal and lay flat on the baking tray and return to the oven to dry out for 10 minutes.

Cool and store in an airtight container.
